The Department of Food, Bioprocessing & Nutrition Sciences at NC State University is a team of scientists, researchers, and teachers committed to guiding the undergraduate and graduate education of students preparing for professional and technical careers in Food, Bioprocessing, and Nutrition Sciences. The department has established researchers and world-class labs to carry out innovative research in related disciplines.
The Postdoctoral Researcher will work in Zheng Lab for food chemistry and food material sciences in the department. The researcher will also be able to work with researchers from other research units affiliated with the department and external institutes under the direction of the PI (other research units incl. Food Engineering Rheology lab, Southeast Dairy Foods Research Center, USDA-ARS Labs, Center for Advanced Processing and Packaging Studies, Plants for Human Health Institute, etc.).
The Postdoctoral Researcher will focus on using various food processing and characterization techniques to design food structures for controlling digestion of food components and for improving texture of FTIR, Raman, NMR), and microscopic techniques (e.g. CLSM, SEM, TEM, AFM). The Postdoctoral Researcher is expected to conduct research using the aforementioned techniques and more. Moreover, the individual is expected to carry out post-doc level research independently in food chemistry and related disciplines, be able to draft publishable research manuscripts, train research students, maintain lab function, write research grant proposals, and assist Dr. Zheng with relevant administrative work. The postdoc will meet frequently with Dr. Zheng to discuss best practices in grant writing, manuscript preparation, and mentoring.

Duties and Responsibilities
- General laboratory management including, but is not limited to, ensuring the lab meets all compliance requirements made by the University’s EHS (Environmental Health and Safety) department, instrument maintenance, ordering chemicals/supplies, and managing SOPs through the lab
- Coordinates and/or conducts multiple, concurrent assignments or a multi-faceted project.
- Assist in the preparation of technical reports, grant proposals, manuscripts, and presentations including the development of independent research objectives
- Assist in the training and mentoring of undergraduate and graduate students
Work Schedule
Mon-Fri, 8am-5pmDepartment Required Skills
- Scientific knowledge and practical skills in the fields of colloid and interface sciences, food chemistry, and biopolymer functionalities
- Technical intimacy with characterizations of rheological and tribological properties of food materials
- Procurement and management of laboratory supplies as well as responsible for EH&S and safety regulation compliance are required
- Strong written and oral communication skills with the ability to develop manuscripts, and assist in the preparation of grant proposals and presentations
Preferred Years Experience, Skills, Training, Education
- Exposure to both academic and industrial settings, experience carrying out research with a proven track record in publication and documented inter-institutional collaborations
- Working experiences in colloid and interface sciences, rheology, enzymology, liquid chromatography, tangential-flow membrane separation, solvent extraction, statistical analysis of spectroscopy data, and GI digestion models are desirable
